Cinnamaldehyde CAS 104-55-2 is an organic compound with the formula C6H5CH=CHCHO. Ooccurring as both cis- and trans isomers, it gives cinnamon its flavor and odor. This pale yellow, viscous liquid occurs in the bark of cinnamon trees and other species of the genus Cinnamomum. The essential oil of cinnamon bark is about 98% cinnamaldehyde. It is yellow oily liquid with a cinnamon odor and sweet taste. Soluble in ethanol (miscible), ether (miscible), chloroform (miscible), and oils (miscible). Insoluble in water, and ligroin.
